A Tradition That Dates Back Centuries: Beef jerky’s origins trace back to the 1800s in South America. The Quechua tribe, ancestors of the ancient Inca empire, created a version of jerky called ch'arki. Early explorers would hang meat over a fire to smoke-cure it, creating the jerky we enjoy today.
