What does “shelf-stable” actually mean?
Shelf-stable simply means you can keep it in your pantry or on your counter instead of the fridge. It’s made to stay fresh and safe at room temperature, so it’s always ready when you need it; no refrigeration is required.
These meats weren’t created out of convenience, but a necessity. Before refrigeration, preserving meat through salting, drying, and smoking was the only way to keep it safe to eat. Over time, what began as a practical solution evolved into a refined craft, becoming a distinct profession in 15th century France and eventually developing into the sophisticated culinary art we know today.
Do shelf-stable products need to be refrigerated?
Shelf stable products do not need to be refrigerated. However, once a package is open, you must ensure that the product is removed from the original plastic packaging to reduce any possibility of moisture build up. Products can be left in open containers or in a paper bag. Cool and dry is always best. Some shelf stable products are still best left in the fridge for long term storage. How can meat be safe without being in the fridge?
Science! Shelf-stable products stay safe at room temperature because of the environment created inside them either from fermentation and or salting and drying. The two key factors are pH level and water activity (AW). These determine what types of bacteria can, or can’t, grow.
For our products:
- pH level: 4.8 – 5.1
- AW level: 0.87 – 0.9
On top of that, at Valbella’s, we naturally wood smoke our products. Wood smoke isn’t just for flavour, it also helps inhibit bacterial growth. This is a traditional method that was used long before refrigeration existed.
As with all inspected food processors, we test every batch to make sure these levels are correct, keeping our products safe and compliant.
How long do shelf-stable products last?
In theory, shelf-stable products can last indefinitely if they are stored properly. That said, once they pass their best before date, the quality starts to slip. They won’t become unsafe, but they can get really dry and, eventually, not very enjoyable to eat. Think of it like a “freshness window” rather than an expiration countdown; you want to enjoy them at their best!

How should I store them at home?
Most importantly, do not store in a plastic bag or in an environment where moisture build up occurs. Product can be stored directly on the countertop, or in a paper bag outside of the fridge. Keep in mind, it's also just fine to keep these products in the fridge. The beauty of shelf stable products is that you do not need to worry once it’s left the fridge. For example, hiking or backpacking trips, and ski days.
Do they taste different from fresh meat?
YES, but that’s part of the charm. Shelf-stable meats are seasoned and preserved in a way that really brings out their flavour, so you get something a bit richer and more savoury. The texture isn’t exactly the same as fresh, but they’re still incredibly satisfying... think bold, snackable, and seriously delicious. Best paired with a crunchy loaf of bread and cheese!
When would I actually use shelf-stable products?
They’re incredibly versatile and come in handy more often than you’d think. Perfect for quick lunches, easy snacks, or putting together a charcuterie spread when you’re entertaining. They’re also ideal for hiking or skiing, easy to pack, no prep needed, and super satisfying when you need a boost.
