What is Rohess Speck?
Rohess Speck is dry brined (salted) and left to dry cure in the salt for 2 weeks before being hung and smoked for a week and then dried for another week. Its smoked in a traditional old smokehouse that we use only for the double smoked bacon. This is what adds to its unique and smoky flavour. In total it takes around a month to make which is why this traditional bacon is so delicious
